Had a few peeps hit me up last night for the recipe so here we go...
Ingredients
2 Packs of Gnocchi (I went regular but the pumpkin is great too)
Ball of Fresh Mozzarella (slice it up)
2 zucchini (dice up)
Pack of Cherry Tomatoes - (halve them)
Minced Garlic
Seasoning - Salt, Pepper, Oregano to taste
Topping - Parm Cheese & Fresh Basil
Preheat the Oven to 400 Degrees
Cook the Gnocchi according to package - drain
In Medium Skillet (I use cast iron) heat up about a tablespoon of olive oil (I eyeball seasonings unless it's something spicy... then I'm a little more precise so not to burn my face off)
Add in a few tsps of minced garlic (this is to your flavor preference) cook for 2 minutes
Add in diced zucchini (about 5 minutes) then add halved cherry tomotoes
Salt - Pepper - Oregano and then add in and mix up the cooked gnocchi
Top with mozzarella slices and back in skillet for 10 minutes (or until the moz is browned - I tend to broil to speed it up the last minute)
Top with grated parm and fresh basil - BOOM!
Takes no more than 30 minutes with prep and cook time!
